Head Brewer, Rick Diaz, began as an avid beer lover and home brewer who left the telecommunications and I.T. industry to follow his passion and joined WYOld West in late July 2017. Starting in just his garage in Los Angeles over 10 years ago, he brewed with a mission to bring well-balanced and unique flavor profiles to the masses.
He has won numerous awards for his Abbey Style Belgian Dubbel including the silver medal at the National Homebrew Competition held yearly by the American Homebrewers Association. Friends and family also love his Roasted Jalapeno Pale Ale and his Acorn Squash Ale during the holiday season. With a little over a year of commercial brewing under his belt, Rick is navigating the craft beer industry and its consumers and producing a number of IPAs, Stouts, German Lagers, and much much more. Kilted Cowboy – On Tap!
Kilted Cowboy is our take on a traditional Scottish Ale. Rich malt aroma and flavor dominate with a touch of smoke from the use peat smoked malt. Heather tips are added to impart a pleasing aroma and smooth bitterness. Hop levels are kept low to emphasize the rich malt flavor of this unique and complex brew. ABV=7.8% IBU’s=28
This brew features local honey that lends a delicate sweetness to the spicy flavors of rye malt. Our Honey Rye is light amber in color with mellow honey and floral hop aromas to form a smooth and easy drinking brew. ABV=6.3% IBU’s=33
Homesteader Oatmeal Stout
A medium bodied stout that has an unreal smoothness from the addition of oats to the mash. The oats not only add a lot of smoothness to the mouthfeel but give a touch of sweetness that is unlike any other type of stout. ABV = 5.61% IBUs = 25
Heart Mountain Hefeweizen – On Tap!
An American Wheat Ale featuring wheat malt and GF Harvest Oats. Yellow/gold in color with a mellow citrus hop aroma. Medium body, mild yeast, and wheat flavors, along with the perfect balance of malt and hops. ABV=5.8% IBU’s=31
Native Red IPA
Our rich version of the classic India Pale Ale. Native Red is deep amber/red in color with a complex malt profile of caramel and biscuit-like flavors. The well-rounded malt base is punctuated by a citrus and spicy hop finish. ABV=6.9% IBU’s=67
A traditional German pale lager originally brewed in Munich. Colter’s Helles is pale golden in color and brewed using lager yeast at cool temperatures to produce a smooth, easy drinking beer. Briess Pilsner and Gold-Pils malts combine to form malt complexity and depth. Traditional German hops are used to add a floral hop flavor, but little hop bitterness or aroma. ABV=5.6% IBU’s=23
Harvest Gold – On Tap!
A light Golden Ale brewed with locally grown GF Harvest Oats and Briess malted barley. Golden in color with a light malt aroma and a hint of floral hops. Medium body with a smooth, slightly sweet malt flavor and a light hop character. ABV=5.9% IBU’s=33
Bangtail Brown Ale
This English Brown Ale is brewed with six different kinds of malted barley to create a rich malt profile. Bangtail is dark brown in color with a big malt body and features chocolate, roasted, and caramel malt flavors with just enough hops to balance. ABV=5.7% IBU’s=35
An American-style IPA brewed with hops grown by Northwest College right here in Powell…so one might call it a Powell-style IPA. We used a blend of whole leaf Columbus, Centennial, and Chinook hops from NWC’s 2016 hop variety trial to create an IPA with medium-high levels of hop bitterness, flavor, and aroma.
G-Street Pale Ale – On Tap!
This classic American Pale Ale brewed with extra hops gives G-Street a wonderful hop character. Citrus hop flavors and aromas are followed by a hint of caramel sweetness and a mildly bitter finish. ABV=6.2% IBU’s=48
An American-style IPA with pronounced hop bitterness, flavor, and aroma. Earthy, citrus, floral, and spicy flavors and aromas are prominent from the use of Columbus, Centennial, and Citra hops. This beer is dry hopped in the fermenter in enhance hop aroma, and it finishes dry with a pleasant bitterness. ABV=7.9% IBU’s=90
Our twist on the classic English Porter style with a roasted, chocolate malt aroma and just a hint of coconut in the nose. Rich, chocolate and roasted malt flavors are dominant, and the toasted coconut comes out in the finish. ABV=6.8% IBU’s=38
A Southern English Brown Ale brewed with spices including sweet orange peel, cloves, cinnamon, and coriander. Perfect for holiday meals or sipping near the fireplace with a warm blanket. ABV = 5.74% IBU = 31.8
